After living in Europe and then graduating from the Texas Culinary Academy,
Shawn Gamble hired many of his TCA classmates to open and run this Barton Springs
Road newcomer. They were already a close-knit group accustomed to working together
and thriving under pressure. Now Chef Gamble and his staff are a well-oiled
machine, providing friendly and professional service and simple, satisfying meals.
Gypsy's menu features a modern take on classic Northern Italian cuisine, served
in a cozy, unpretentious atomosphere. The newly remodeled interiors are elegent yet
welcoming. A natural rock wall with tricking water and lush, green plants adds a
touch of romance. The winding staircase in back leads to an open terrace with skyline
views -- an ideal setting for enjoying an Italy-inspired cocktail or a glass of wine.
Although the menu is small, it features something for everyone, and dishes are well
executed and nicely presented. ... The big guns come out at dinner. The grilled
lamb chops represent a balanced combination of flavors and textures, perfectly
cooked to temperature and served over orzo tossed with fresh mint pesto,
sweet English peas and carrots. A sea bass special, served atop wilted bitter greens
in a light broth, could not be more delicious. And the limoncello creme brulee is
the perfect tangy-sweet dessert. Best of all: These TCA alumni are living their
culinary dreams.
